Diabetic Ground Beef Pie

  •  1 lb ground beef (90% lean or leaner)
  • ½ yellow or white onion, diced
  • 1 tsp garlic salt or Lawry's Seasoned Salt
  • 1 tsp Worcestershire
  • ½ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 Tbs unsalted butter
  • ¾ cup whole or 2% milk
  • 2 eggs
  • 6 oz shredded cheddar cheese

  1. Preheat the oven to 375F
  2. Combine 1 lb ground beef, ½ diced onion, 1 teaspoon garlic salt, and 1 teaspoon Worcestershire sauce in a large skillet or saucepan over medium-high heat and sauté, breaking up the beef into smaller pieces as it cooks.
  3. Continue cooking, stirring occasionally, for about 8 minutes, until the beef is cooked and browned and the onion is softened; drain fat and set aside.
  4. To make the biscuit mixture, combine the ½ cup flour, 1 teaspoon baking powder, and ½ teaspoon salt in a mixing bowl, and mix to combine. 
  5. Add 2 Tbs butter to the dry ingredients and, using a fork, cut it into the flour until it breaks into small, gravel-sized pieces*.
  6. Add the 2 eggs and ¾ cup milk to the mixing bowl with the dry ingredients and butter mixture, and stir with a fork or whisk until fully incorporated. 
  7. This mixture will be a little lumpy.
  8. Put the cooked ground beef mixture into a 9'' pie plate, top with cheese, and then pour the biscuit mixture over the top and spread it all around so it evenly covers.
  9. Bake uncovered at 375F for 25 minutes. 
  10. The pie should be cooked through, bubbling around the edges, and nicely browned on top.
  11. Allow the pie to rest about 5 minutes before slicing.
  12. Enjoy hot with your favorite hamburger condiments.

*Can be replaced with Carb Quick for lower carbs
