Pulled pork wasn't always popular except in the South, where pork was king! This recipe calls for cooking the pig from start to finish, and it's pretty easy. You need patience while you smell it roasting! lol
- 1 lb pork tenderloin
- 1/2 tsp pepper
- 1 tbsp olive oil
- 1/4 tsp crushed red pepper flakes (optional)
- 1 cup diced onion
- 2 minced garlic cloves
- 1/2 cup low-sugar barbecue sauce (I use Sweet Baby James Original)
- 1/4 cup water
- 1 tsp vinegar
- In a pan, heat the oil until glistening.
- Sear the loin on all sides.
- Remove, season with pepper, then return to the pan.
- Cover and bake at 350 for 25 minutes.
- Add the onion to the pan and sauté.
- Add the garlic just as the onion becomes translucent.
- Add the sauce, water, and vinegar, then return the loin to the pan.
- Simmer for 10 more minutes, then remove and shred.
- Add back into the sauce.
