Meal bowls are a fairly new phenomenon. Based on the Chinese Buddah bowl, a whole lot of bowls have popped up in recent years. I like bowls because they can be prepped in advance and the meat warmed up right before serving.
- 1 lb ground lean beef or turkey
- 1/2 cup marinara or pizza sauce (low-carb, no added sugar)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup sliced pepperoni
- 1 cup diced bell peppers (any color)
- 1/2 cup sliced black olives
- 1/2 cup sliced mushrooms
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- Fresh basil leaves, for garnish (optional)
- Brown the seasoned meat in a skillet and drain fat.
- Sautee the pepperoni, bell peppers and mushrooms until just done.
- Dividing between four bowls, layer the olives, parmesan, mozzarella, sauce and the meat mixture
- Top with the pepper flakes or basil or bth and eat hardy!
