Burger Bake

This is a really easy dish and is very tasty!You will note there are NO carbs here. So you can alternatively make it withsome lasagne noodles or, my favorite, egg roll wrappers used like lasagne. You'll note that I added in duck eggs. The first time I made this, I did it with duck eggs. It comes out MUCH richer! 

  • 1 lb lean ground beef
  • 3 duck eggs or 6 large eggs
  • 1/4 cup milk of choice
  • 1 8oz pack of Neufchatel cheese
  • 1 package (10 oz) frozen spinach, defrosted and squeezed
  • 1 small onion, chopped
  • 3 garlic cloves, chopped
  • Salt 
  • Pepper
  • Italian Seasoning
  • 1/2 cup shredded white sharp cheddar

  1. In a pan, brown the hamburger, onion, and garlic together.
  2. Add in the seasonings and cook until fragrant.
  3. Add in the spinach
  4. Add in the Neufchatel cheese and cook down until well mixed in with the burger
  5. Put in a glass 9x9 baking casserole that's been buttered
  6. Pat down firmly.
  7. In a bowl, whisk the eggs and milk together
  8. Pour over the burger and top with the cheddar
  9. Bake at 350 for half an hour or until set.
