- 4 bell peppers, tops cut off and seeds removed
- 1/2 pound ground turkey
- 1/2 cup cooked quinoa
- 1/2 cup no-salt-added tomato sauce
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1/2 teaspoon black pepper
- Mix turkey, quinoa, tomato sauce, garlic powder, oregano, and pepper.
- Stuff each bell pepper with the mixture and place in the slow cooker.
- Cook on low for 5-6 hours.
- Serve warm.
NOTE: because this uses RAW meat, you will want to make sure it's cooked to 165 in the middle before serving.
