Slow Cooker Stuffed Bell Peppers

  • 4 bell peppers, tops cut off and seeds removed
  • 1/2 pound ground turkey
  • 1/2 cup cooked quinoa
  • 1/2 cup no-salt-added tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper

  1. Mix turkey, quinoa, tomato sauce, garlic powder, oregano, and pepper.
  2. Stuff each bell pepper with the mixture and place in the slow cooker.
  3. Cook on low for 5-6 hours.
  4. Serve warm.

NOTE: because this uses RAW meat, you will want to make sure it's cooked to 165 in the middle before serving.
