Slow Cooker Beef and Broccoli

  •  1 pound lean beef, sliced
  • 1 cup low-sodium beef broth
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger
  • 3 cups broccoli florets
  • 1 tablespoon cornstarch (optional, for thickening)

  1. Place beef, broth, soy sauce, garlic, and ginger in the slow cooker.
  2. Cook on low for 6 hours.
  3. Add broccoli and cook for another 30 minutes.
  4. If needed, mix cornstarch with water and slowly add to the broth to thicken.
