Italian Pasta-free Bowls
- 1 lb ground Italian sausage (or ground beef/turkey)
- 1/2 cup marinara or pizza sauce (low-carb, no added sugar)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup sliced pepperoni
- 1 cup diced bell peppers (any color)
- 1/2 cup sliced black olives
- 1/2 cup sliced mushrooms
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- Fresh basil leaves, for garnish (optional)
- Set oven to 375°F
- Brown the sausage in a skillet. Drain the fat.
- Mix in garlic powder, Italian seasoning, and red pepper flakes.
- Divide the sausage into bowls, add the sauce, veggies, pepperoni, and cheese.
- Bake for 15-20 minutes until cheese is bubbly and golden.
- Let cool, garnish with basil, and enjoy!
- NOTE: if you don't have oven-safe bowls, bake as a casserole in an 8x8 and divide down
