Italian Pasta-free Bowls

  •  1 lb ground Italian sausage (or ground beef/turkey)
  •  1/2 cup marinara or pizza sauce (low-carb, no added sugar)
  •  1 cup shredded mozzarella cheese
  •  1/2 cup grated Parmesan cheese
  •  1 cup sliced pepperoni
  •  1 cup diced bell peppers (any color)
  •  1/2 cup sliced black olives
  •  1/2 cup sliced mushrooms
  •  1/2 tsp garlic powder
  •  1/2 tsp Italian seasoning
  •  1/4 tsp crushed red pepper flakes (optional)
  •  Fresh basil leaves, for garnish (optional)

  1. Set oven to 375°F 
  2. Brown the sausage in a skillet. Drain the fat.
  3. Mix in garlic powder, Italian seasoning, and red pepper flakes.
  4. Divide the sausage into bowls, add the sauce, veggies, pepperoni, and cheese.
  5. Bake for 15-20 minutes until cheese is bubbly and golden.
  6. Let cool, garnish with basil, and enjoy!
  7. NOTE: if you don't have oven-safe bowls, bake as a casserole in an 8x8 and divide down
