- 3 large chicken breasts, cooked and cut up or shredded
- salt
- pepper
- garlic powder
- 2 bags of frozen broccoli, defrosted
- 8 oz Neufchâtel cream cheese
- 3 tbsp light mayonnaise
- 1 cup reduced-fat shredded cheddar cheese
- 1/2 cup no salt-added chicken broth
- Place the chicken in a prepared casserole
- Mix the cream cheese, mayo, and half cup of broth together until smooth
- Mix in the cheddar
- Place the broccoli over the chicken and top with the cream cheese mixture
- Top with another cup of shredded cheese
- Bake at 359 for 20-25 minutes
- Then place under the broiler for 3-4 minutes to brown the top
- This makes 6 servings at 396 calories each.
I recommend serving with pita or corn chips.
