Low Carb Cheesy chicken and broccoli

  •  3 large chicken breasts, cooked and cut up or shredded
  • salt
  • pepper
  • garlic powder
  • 2 bags of frozen broccoli, defrosted
  • 8 oz Neufchâtel cream cheese
  • 3 tbsp light mayonnaise
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup no salt-added chicken broth

  1. Place the chicken in a prepared casserole
  2. Mix the cream cheese, mayo, and half cup of broth together until smooth
  3. Mix in the  cheddar
  4. Place the broccoli over the chicken and top with the cream cheese mixture
  5. Top with another cup of shredded cheese
  6. Bake at 359 for 20-25 minutes
  7. Then place under the broiler for 3-4 minutes to brown the top
  8. This makes 6 servings at 396 calories each.

I recommend serving with pita or corn chips.
