Grilled Chicken Avocado Salad

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon juice

Salad Ingredients:

  • 1 large avocado (diced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh cilantro (chopped)
  • 1 cup lettuce or mixed greens (optional)

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt & pepper to taste

Rub the chicken with olive oil, garlic powder, paprika, salt, and pepper 

Grill or pan-cook for 6-7 minutes per side until golden brown.

Let it rest for 5 minutes, then slice. NOTE: YOU CAN SUB WITH ALREADY COOKED CHICKEN

Prepare the Salad:

In a bowl, mix the avocado, cherry tomatoes, and chopped cilantro.

Make the Dressing:

Whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper.

Assemble & Serve:

Add the sliced chicken to the salad and drizzle with dressing.

Toss gently and enjoy this flavorful, fresh salad!
