Easy Hot Chicken Salad
- 2 cups diced, cooked chicken
- 1 cup chopped celery
- 1/2 cup toasted almonds
- 1/2 cup light mayo
- 1/2 cup light sour cream
- 1/2 cup shredded American or Swiss cheese
- lemon juice to taste
- 1 tbsp chopped onion
- 1 cup crushed cornflakes
- Preheat the oven to 325
- lightly grease 8x8 casserole
- Combine the chicken, celery, almonds, mayo, sour cream, cheese, lemon juice, and onion, and transfer to a baking dish
- Spray the top to help it crisp up some
- Top with the corn flakes and bake for 35-45 minutes, or until heated through.
