Easy Hot Chicken Salad

  • 2 cups diced, cooked chicken
  • 1 cup chopped celery
  • 1/2 cup toasted almonds
  • 1/2 cup light mayo
  • 1/2 cup light sour cream 
  • 1/2 cup shredded American or Swiss cheese
  • lemon juice to taste
  • 1 tbsp chopped onion
  • 1 cup crushed cornflakes

  1. Preheat the oven to 325
  2. lightly grease 8x8 casserole
  3. Combine the chicken, celery, almonds, mayo, sour cream, cheese, lemon juice, and onion, and transfer to a baking dish
  4. Spray the top to help it crisp up some
  5. Top with the corn flakes and bake for 35-45 minutes, or until heated through.
