- 1 loaf of french bread cut into 1/4" slices
- 1 tbsp EVOO
- 8 plumb tomatoes, diced
- 1/3 c fresh chopped basil
- 1 oz freshly grated parmesan
- 2 cloves minced garlic
- 1 tbsp good quality balsamic vinegar
- 2 tsp EVOO
- 1/4 tsp each salt and black pepper
- Preheat oven to 400
- Brush the slices with 1 tbsp of oil and place in the oven until golden, flipping 1/2 way through
- Toss the other items together and chill
- Spoon over the toasted bread slices.
