Avocado, Cherry Tomato & Feta Flatbread

  • 4 flatbreads or naan
  • 4 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 4 cups cherry tomatoes, halved
  • 4 ripe avocados, diced
  • 1 cup crumbled feta cheese
  • 4 tablespoons fresh basil, chopped
  • 4 teaspoons lemon juice
  • Salt and black pepper to taste
  • Optional: drizzle of balsamic glaze

  1. Preheat oven to 375 F. 
  2. Place flatbreads on a baking sheet.
  3. Brush each flatbread lightly with olive oil and sprinkle with minced garlic. 
  4. Bake for 5-6 minutes until slightly crisp.
  5. Remove from oven and top with cherry tomatoes, avocado, and crumbled feta.
  6. Drizzle with lemon juice, sprinkle basil, and season with salt and pepper.
  7. Optional: drizzle with balsamic glaze before serving.
