Turkey and Avocado Salad

for 4

  • 12 oz cooked turkey (can use chicken)
  • 1large avocado
  • 1 pack water cress
  • 4 cups salad greens
  • 5 tablespoons mixed seeds
  • Dressing
  • 2 tbsp apple juice 
  • 2 tbsp plain yogurt
  • 1 tsp honey
  • 1 tsp whole-grain mustard
  • salt and pepper

  1. Thinly slice the turkey 
  2. Dice the avocado and mix it with the water cress and salad greens in a large bowl
  3. Add the turkey and toasted seeds to combine
  4. Make the dressing by whicksing the juice, yogurt, honey, and mustard and season with salt and pepper to taste
  5. Pour over the salad and mix. 
  6. Serve with bread.
