Jumbo Shrimp and Salad

serves 4

  • 13 oz raw peeled shrimp
  • 2 cups bean sprouts
  • 1 cup snow peas, shredded
  • 1/2 cup thin sliced water chestnuts
  • 1/2 head shredded lettuce of choice
  • 12 radishes, thinly sliced
  • 1 tbsp sesame seed, lightly toasted

Dressing

  • 2 tbsp rice wine vinegar
  • 1/2 cup sunflower oil
  • 1 tsp five spice powder
  • 2 tbsp mirin

  1. Steam the shrimp for 2-3 minutes until pink, set aside to cool.
  2. Make the dressing 
  3. Toss together the bean sprouts, snow peas, chestnuts, lettuce and radishes, place the shrimp and sesame seeds on top
  4. Drizzle dressing and serve
