Broccoli Salad with Bacon and Cheese

6 servings

  • 1/2 pound bacon
  • 1/2 head broccoli, or more to taste
  • 1/2 red onion, chopped
  • 1/2 cup golden raisins
  • 1/2 (4 ounce) package shredded sharp Cheddar cheese
  • 1/4 cup mayonnaise
  • 2 tbsp cup white sugar or substitute
  • 1/2 tablespoon white vinegar

  1. Cook bacon in a large skillet over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  2.  Drain on paper towels until cool enough to handle, about 5 minutes. 
  3. Crumble cooked bacon into a small bowl.
  4. Cut broccoli into florets, dice stems, add florets and stems to a large bowl. 
  5. Stir in onion. 
  6. Add raisins and Cheddar cheese. 
  7. Stir in crumbled bacon.
  8. Combine mayonnaise, sugar, and vinegar in a small bowl; pour over broccoli mixture and stir until broccoli is completely coated.
