Breakfast Stuffed Peppers

You will want to prep and even cook these the day before.

  • 3 green bell peppers

Cut bell peppers in half lengthwise and clean out.

Drop in boiling water for a couple of minutes to slightly soften

Filling:

  • 1 lb Crumbled, cooked sausage
  • 1 cup frozen shredded potatoes
  • 1 cup shredded cheese, divided
  • 6 eggs
  • 6 green onions, sliced

  1. Mix all of the above together and stuff into the green pepper halves. 
  2. Cover with foil and bake at 425 for 20 minutes
  3. Top with remaining cheese and place back in until cheese melts
