Lane Cake

 The first time I heard of a Lane Cake was when reading To Kill and Mockingbird. I remember thinking: What is a lane cake and why was it so impressive to little Scout? Well, below is the recipe. Maybe that will explain it!

The Cake

  • 1 1/2 sticks butter
  • 2 c sugar
  • 3 c flour
  • 2 tsp baking powder
  • 1/2 c milk
  • 1 tsp vanilla
  • 7 egg whites

  1. Cream butter and sugar until light and fluffy
  2. Mix together the milk and vanilla
  3. Add flour, salt, baking powder (mixed together) alternately with milk vanilla mixture
  4. Fold in beaten egg whites.
  5. Bake in 3 layer pans at 350 and cool

Cake Filling

  • 7 egg yolks
  • 1 c sugar
  • 1 stick butter
  • 1 c raisins, finely chopped
  • 1 c pecans finely chopped
  • 1 c grated coconut
  • 1/2 c bourbon

  1. In double broiler cook yolks, sugar and butter together until thick. 
  2. Remove from heat.
  3. Add raisins nuts, coconut and bourbon
  4. Spread on layers and sides of cake

NOTE: you could use a boiled white frosting on the sides if you like!
