The first time I heard of a Lane Cake was when reading To Kill and Mockingbird. I remember thinking: What is a lane cake and why was it so impressive to little Scout? Well, below is the recipe. Maybe that will explain it!
The Cake
- 1 1/2 sticks butter
- 2 c sugar
- 3 c flour
- 2 tsp baking powder
- 1/2 c milk
- 1 tsp vanilla
- 7 egg whites
- Cream butter and sugar until light and fluffy
- Mix together the milk and vanilla
- Add flour, salt, baking powder (mixed together) alternately with milk vanilla mixture
- Fold in beaten egg whites.
- Bake in 3 layer pans at 350 and cool
Cake Filling
- 7 egg yolks
- 1 c sugar
- 1 stick butter
- 1 c raisins, finely chopped
- 1 c pecans finely chopped
- 1 c grated coconut
- 1/2 c bourbon
- In double broiler cook yolks, sugar and butter together until thick.
- Remove from heat.
- Add raisins nuts, coconut and bourbon
- Spread on layers and sides of cake
NOTE: you could use a boiled white frosting on the sides if you like!
