Cheesy Chicken & Summer Squash Skillet
- 1/2 lb summer squash, cubed
- 1/2kb zucchini, cubed
- 1 lb chicken breast, cubed
- 1 cup cheddar cheese
- 1 tbsp olive oil
- 2 smashed garlic
- 1 medium onion thinly sliced
- salt, pepper, and Italian seasoning to taste
- Dice the chicken breast into 1-inch pieces.
- Season with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through (about 8-10 minutes).
- While the chicken cooks, dice the summer squash and zucchini.
- Mince the garlic and slice the onion.
- Add onion and garlic to the skillet with the chicken and cook for 2-3 minutes until softened.
- Add the diced summer squash and zucchini to the skillet.
- Cook for 5-7 minutes, or until tender-crisp.
- Reduce heat to low.
- Sprinkle cheddar cheese evenly over the chicken and vegetables.
- Cover and cook until cheese is melted (about 2-3 minutes).
- Serve immediately.
