Bran Flake Muffins

  • 1 c sifted all purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 c bran flakes
  • 2/3 c milk
  • 1 egg
  • 2 tbsp melted shortening

  1. Sift the dry except for the bran.
  2. Add in the bran.
  3. Combine egg,milk and shortening 
  4. Add to the dry and mix quickly but do not beat
  5. fill muffin cups to 2/3 full and bake at 400 to 20-30 minutes
