- 2 c sifted all purpose flour
- 3 tsp baking powder
- 1/2 tsp salt
- 3 tbsp sugar
- 1/4 cup softened shortening
- 1 egg
- 1 c milk
- Sift the dry together
- Cut in the shortening
- Beat the milk and egg together
- Add to the flour mixture, stirring just enough to mix but do not beat
- Fill muffin tins to 2/3 full and bake at 400 for 25 minutes.
[can stir in 1/2 to 1 c fresh blueberries just before filling]
