Pecan Pie Oatmeal Cookies
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 cups old-fashioned oats
- 1 cup chopped pecans
- ½ cup corn syrup
- 1 teaspoon cinnamon
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Fold in oats, chopped pecans, and corn syrup until evenly blended.
- Drop spoonfuls of dough onto the baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes, until edges are golden and centers just set.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. See less
