Pecan Pie Oatmeal Cookies

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 cups old-fashioned oats
  • 1 cup chopped pecans
  • ½ cup corn syrup
  • 1 teaspoon cinnamon

  1.  Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2.  In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3.  Add eggs one at a time, mixing well after each, then stir in vanilla.
  4.  In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5.  Gradually mix the dry ingredients into the wet mixture until just combined.
  6.  Fold in oats, chopped pecans, and corn syrup until evenly blended.
  7.  Drop spoonfuls of dough onto the baking sheet, spacing about 2 inches apart.
  8.  Bake for 10–12 minutes, until edges are golden and centers just set.
  9.  Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. See less
