Diabetic Safe Pudding with Protein

 The protein comes from chia seeds and almond milk or regular milk if you like (1% at least). Not everyone likes the texture of the gel like chia seed. So I've made an adjustment for that, too!

This serves one person.

  • 1/4 cup chia seeds
  • 3 tbsp unsweetened cocoa powder
  • powdered sweetener alternative 
  • 1 1/2 cups unsweetened almond milk
  • 1 tsp vanilla extract

  1. Mix together the cocoa powder, the sweetener and the chia seeds and place in a high powered blender.
  2. Add in the milk and vanilla extract.
  3. Pour the milk in with the dry and stir. 
  4. Allow it to sit on the counter for 10 minutes before stirring again.
  5. Pour into a container, cover and place in the fridge overnight.
  6. BUT IF YOU WANT IT SMOOTH- 
  7. After the 10 minutes, place in a high powered blender and blend on high until completely smooth.
  8. Pour into glass, cover and chill overnight.
