This requires you to roast your own chicken breasts. I strongly recommend keeping the bone in and skin on to roast. You will remove them after.
- 4 chicken breasts, skin on and bone in
- Salt and pepper to taste
- 1 tbsp EVOO
- 1/2 cup mayonnaise
- 5 tbsp fresh chopped tarragon
- 1 cup thinly sliced celery
- 1 cup seedless green grapes, halved
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/4 cup chopped walnuts
- Pat dry the chicken.
- Coat with oil on both sides and salt and pepper.
- Place on an oiled, foil lined sheet and bake at 350 for 35 minutes
- Remove and cover with foil loosely
- Allow to cool to where it can be handled
- Remove the skin and debone
- Cut up into bite sized pieces (1/2" -1" cubes)
- Place the chicken in a bowl and add the tarragon and celery
- Add in the mayonnaise, salt and pepper and mix well
- Add in the grapes and walnuts and mix again
- Cover and chill for an hour or more.
