Best Quality Chicken Salad

 This requires you to roast your own chicken breasts. I strongly recommend keeping the bone in and skin on to roast. You will remove them after.

  • 4 chicken breasts, skin on and bone in
  • Salt and pepper to taste
  • 1 tbsp EVOO
  • 1/2 cup mayonnaise
  • 5 tbsp fresh chopped tarragon
  • 1 cup  thinly sliced celery 
  • 1 cup seedless green grapes, halved
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/4 cup chopped walnuts

  1. Pat dry the chicken.
  2. Coat with oil on both sides and salt and pepper.
  3. Place on an oiled, foil lined sheet and bake at 350 for 35 minutes
  4. Remove and cover with foil loosely
  5. Allow to cool to where it can be handled
  6. Remove the skin and debone
  7. Cut up into bite sized pieces (1/2" -1" cubes)
  8. Place the chicken in a bowl and add the tarragon and celery
  9. Add in the mayonnaise, salt and pepper and mix well
  10. Add in the grapes and walnuts and mix again
  11. Cover and chill for an hour or more.
