I used to make this for the children when they were young. Right down to wrapping it up and serving it in newsprint (with napkins lining the paper, of course!) They loved it!
- 1/2 cup plus 1 tbsp flour
- 1/2 tsp baking powder
- 1/2 tsp lemon zest
- pinch of cayenne pepper (or paprika)
- 1 tsp salt
- 1/2 tsp pepper
- 1 egg
- 1/2 cup water
- 1 lb cod fish cut into 1.5x3" chunks
- Whisk together the dry
- Whisk together the wet
- In a large pan, heat 1/2 inch oil to 360 degrees (use candy thermometer or other to check)
- Whisk together the dry and wet
- Dip fillets into the batter and place in the hot oil, turn when browned on the first side.
The Chips
- 2-3 medium russet potatoes, cut into eighths lenghtwise
- fresh rosemary
- chopped garlic
- 1/4 cup EVOO
Bake in oven at 400 degrees for 30-35 minutes, turning half way to crisp.
Salt just before serving
You may want to have some Malt vinegar handy!
