Smoked Mozzarella Skillet Chicken

  •  4 skinless, boneless chicken breasts
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 (8-ounce) package smoked mozzarella cheese, thinly sliced

  1. Place chicken breasts on a work surface; cover with waxed paper. 
  2. Pound each breast with the smooth side of a meat mallet to an even thickness; sprinkle both sides with oregano, onion powder, and salt.
  3. Heat olive oil in a large cast-iron skillet over medium heat.
  4.  Add breasts; cook for about 4 minutes. 
  5. Flip; cook about 3 minutes more. 
  6. Top breasts with sliced mozzarella.
  7.  Cover the skillet; cook until the cheese has melted and the chicken is no longer pink in the center and the juices run clear, 2 to 3 minutes more. 
  8. An instant-read thermometer inserted into the center should read at least 165°F.
  9. Transfer breasts to plates; cool for 1 minute before serving.
