- 1 lb salmon fillet, cut into bite-sized cubes
- 2 tbsp olive oil or butter
- Salt & freshly ground black pepper
- 2 cloves garlic, minced
- 2 tbsp butter
- Juice of 1 lemon
- 1 tbsp fresh chives or parsley, chopped
- Heat olive oil or butter in a skillet over medium-high heat.
- Season salmon cubes with salt and pepper.
- Sear salmon bites in batches, about 2-3 minutes per side, until golden and just cooked through.
- Remove from pan.
- In the same skillet, add butter and garlic, cook until fragrant (about 30 seconds).
- Add lemon juice, stir to combine and let the sauce slightly thicken.
- Return salmon bites to pan, toss gently in the sauce to coat.
- Sprinkle with fresh chives or parsley and serve warm.
Note: you could also do this with tuna steaks
