Pan-Seared Salmon Bites with Lemon Butter Sauce

  • 1 lb salmon fillet, cut into bite-sized cubes
  • 2 tbsp olive oil or butter
  • Salt & freshly ground black pepper
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • Juice of 1 lemon
  • 1 tbsp fresh chives or parsley, chopped

  1. Heat olive oil or butter in a skillet over medium-high heat.
  2. Season salmon cubes with salt and pepper.
  3. Sear salmon bites in batches, about 2-3 minutes per side, until golden and just cooked through. 
  4. Remove from pan.
  5. In the same skillet, add butter and garlic, cook until fragrant (about 30 seconds).
  6. Add lemon juice, stir to combine and let the sauce slightly thicken.
  7. Return salmon bites to pan, toss gently in the sauce to coat.
  8. Sprinkle with fresh chives or parsley and serve warm.
Note: you could also do this with tuna steaks
