No Cook Breakfast Bites
- makes 10-12 bites
- 1 cup cottage cheese
- 1 ripe banana, mashed
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/2 cup rolled oats
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup mini chocolate chips (optional)
- In a large bowl, combine the cottage cheese, mashed banana, peanut butter, honey, vanilla extract, and cinnamon until well mixed.
- Stir in the rolled oats and mini chocolate chips until evenly distributed.
- Scoop the mixture into bite-sized portions and place them on a lined baking sheet.
- Refrigerate for at least 30 minutes to firm up before serving.
