No Cook Breakfast Bites

  •  makes 10-12 bites
  • 1 cup cottage cheese
  • 1 ripe banana, mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/2 cup rolled oats
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/4 cup mini chocolate chips (optional)

  1. In a large bowl, combine the cottage cheese, mashed banana, peanut butter, honey, vanilla extract, and cinnamon until well mixed.
  2. Stir in the rolled oats and mini chocolate chips until evenly distributed.
  3. Scoop the mixture into bite-sized portions and place them on a lined baking sheet.
  4. Refrigerate for at least 30 minutes to firm up before serving.
