German Carrot Salad

  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated fresh ginger
  • 1 pound carrots, peeled and coarsely shredded
  • 1 medium pink lady apple - cored, peeled, and coarsely shredded
  • 2 tablespoons chopped hazelnuts or walnuts
  • 1 tablespoon fresh parsley

  1. Whisk together oil, lemon juice, honey, salt, and ginger in a bowl until combined. 
  2. Add carrots and apple; toss to combine.
  3. Cover and refrigerate for at least 1 hour before serving.
  4. Garnish with hazelnuts or walnuts and parsley.
