German Carrot Salad
- 2 tablespoons vegetable oil
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon grated fresh ginger
- 1 pound carrots, peeled and coarsely shredded
- 1 medium pink lady apple - cored, peeled, and coarsely shredded
- 2 tablespoons chopped hazelnuts or walnuts
- 1 tablespoon fresh parsley
- Whisk together oil, lemon juice, honey, salt, and ginger in a bowl until combined.
- Add carrots and apple; toss to combine.
- Cover and refrigerate for at least 1 hour before serving.
- Garnish with hazelnuts or walnuts and parsley.
