High-Protein Scotch Eggs

  • 6 large eggs
  • 1 lb lean turkey/chicken sausage
  • 1 tbsp almond flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste

  1. Boil eggs (6–7 minutes soft, 9–10 minutes hard). Cool in ice bath and peel.
  2. Mix sausage with almond flour and seasonings.
  3. Flatten sausage mixture and wrap evenly around each egg.
  4. Bake at 375°F for 25–30 minutes, or air fry at 375°F for 15–18 minutes.
  5. Cool slightly, slice, and enjoy.
