High-Protein Cheesy Chicken & Veggie Bake

Servings: 6–8 squares

  • 3 cups cooked, shredded chicken breast
  • 1 cup low-fat cottage cheese (blended smooth)
  • 4 large eggs
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup finely chopped green onions
  • ½ cup diced bell peppers (optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • Salt & black pepper to taste
  • Red pepper flakes (optional)

  1. Preheat to 375°F (190°C). Lightly grease a baking dish (8x8 or similar).
  2. In a large bowl, whisk eggs and blended cottage cheese until smooth.
  3. Fold in shredded chicken, green onions, peppers, seasonings, and half of the mozzarella.
  4. Spread mixture evenly into the baking dish. 
  5. Top with remaining mozzarella and cheddar.
  6. Bake 25–30 minutes until golden, bubbly, and set in the center.
  7. Let rest 5–10 minutes before slicing into squares.
