Diabetic Apple Pie
- 1 unbaked 2-crust pie shell
- 5 or 6 pared, sliced apples
- 1 (6 oz.) can frozen apple juice
- 2 tbsp. cornstarch
- 1/2 c. water
- Cinnamon
- 2 tbsp. butter
- Fill pie shell with sliced apples.
- Heat apple juice to boiling.
- Dissolve cornstarch in water and stir into hot juice.
- Cook until thickened.
- Sprinkle cinnamon over apples; dot with butter.
- Pour juice over all and cover with upper crust.
- Prick crust. Bake in 450 degree oven for 10 minutes.
- Reduce heat to 350 degrees and bake until done, 35 to 45 minutes.
