Low-Carb Cheesy Garlic Chicken Wraps

  •  2 cups cooked chicken (shredded or diced)
  •  1 cup shredded mozzarella cheese
  •  1/2 cup cream cheese (softened)
  •  2 cloves garlic (minced)
  •  1 tsp Italian seasoning
  •  Salt and pepper to taste
  •  4 large low-carb tortillas (such as almond flour or coconut flour tortillas)
  •  1 cup fresh spinach or lettuce (optional)
  •  Olive oil (for cooking)

  1. In a large bowl, mix the cooked chicken, mozzarella cheese, cream cheese, minced garlic, Italian seasoning, salt, and pepper until well combined.
  2. Lay a low-carb tortilla flat and place a generous amount of the chicken mixture in the center. Add fresh spinach or lettuce if desired. 
  3. Fold in the sides and roll up the tortilla tightly to enclose the filling.
  4. Heat a bit of olive oil in a skillet over medium heat. 
  5. Place the wraps seam-side down in the skillet. 
  6. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  7. Slice the wraps in half and serve warm with your favorite low-carb dipping sauce or a side salad.
