These are also diabetic-approved if you use a sugar substitute like Monk Fruit. Just make sure you use the right ratio!
- 1 cup peanut butter (chunky or smooth, regular peanut butter OR lower sugar but not "natural")
- 1/2 cup sugar or substitute by taste
- 1 large egg
- Mix together well and roll into 1" balls and hatch top with a fork, pressing down slightly
- Bake at 350 for 10 minutes.
- Allow to cool on tray.
