Easy Peanut butter cookies

 These are also diabetic-approved if you use a sugar substitute like Monk Fruit. Just make sure you use the right ratio!

  • 1 cup peanut butter (chunky or smooth, regular peanut butter OR lower sugar but not "natural")
  • 1/2 cup sugar or substitute by taste
  • 1 large egg

  1. Mix together well and roll into 1" balls and hatch top with a fork, pressing down slightly
  2. Bake at 350 for 10 minutes.
  3. Allow to cool on tray.
