Peppered Beef & Salad Greens

  •  1 lb thick cut sirloin steaks                                         
  • 3 tbsp crushed colored peppercorns                         
  • 1 1/2 tsp horseradish                                                     
  • 4 cups mixed greens                                                      
  • 1 thinly sliced red onion                                               
  • coarse salt flakes
  • 3/4 cup plain regular yogurt
  •  1 crushed garlic clove
  • 1 1/2 cups button mushrooms, sliced
  • 1 tbsp EVOO

  1. Trim any extra fat and rub steak with the peppercorns and salt flakes.
  2. Mix the yogurt, horseradish, garlic and salt and pepper (if desired) for dressing.
  3. Add the greens and mushrooms and most of the red onion to a large bowl and toss with the dressing.
  4. Heat the oil in a large skillet until very hot and carmelize the steaks on one side for 2 minutes.
  5. Flip and cook another 2 minutes.
  6. Place greens in center of plate and serve beef on top and top with remaining red onion.
Note: This calls for 6 steaks totalling 1 lb. 148 calories per serving.
