Peanut Butter Blossoms

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 1 stick or 8 tbsp room temperature butter
  • 1/2 cup granulated sugar (plus some for rolling)
  • 1/2 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla
  • 48 chocolate kisses

  1. Whisk the flour, baking soda, and salt
  2. Add the butter, sugars, and cream on high until fluffy (about 5 minutes) 
  3. Add the peanut butter and continue beating
  4. Add the vanilla and beat until combined
  5. On low, add the dry ingredients until combined
  6. Cover and refrigerate for 1 hour
  7. Preheat at 350 with the racks in the upper and lower thirds of the oven
  8. Roll half the dough into 1" balls, then roll in sugar
  9. Place on sheets about 2" apart-chill remaining dough while this cooks
  10. Bake, rotating and switching pans halfway through until cookies are puffed and lightly golden (about 10 minutes)
  11. Press candy into the center 
  12. Allow to cool for 10 minutes on the sheet before transferring to wire racks.
  13. Repeat with the remaining dough.
