Peanut Butter Blossoms
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp kosher salt
- 1 stick or 8 tbsp room temperature butter
- 1/2 cup granulated sugar (plus some for rolling)
- 1/2 cup light brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 tsp vanilla
- 48 chocolate kisses
- Whisk the flour, baking soda, and salt
- Add the butter, sugars, and cream on high until fluffy (about 5 minutes)
- Add the peanut butter and continue beating
- Add the vanilla and beat until combined
- On low, add the dry ingredients until combined
- Cover and refrigerate for 1 hour
- Preheat at 350 with the racks in the upper and lower thirds of the oven
- Roll half the dough into 1" balls, then roll in sugar
- Place on sheets about 2" apart-chill remaining dough while this cooks
- Bake, rotating and switching pans halfway through until cookies are puffed and lightly golden (about 10 minutes)
- Press candy into the center
- Allow to cool for 10 minutes on the sheet before transferring to wire racks.
- Repeat with the remaining dough.
