Beer and Cheese Dip
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2/3 cups whole warm milk
- 1/2 cup beer
- 1 tbsp Worcestershire sauce
- 1 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1 cup sharp cheddar cheese
- 1 cup shredded gruyere
- chopped chives for serving
- In a medium saucepan, on medium heat, melt butter
- Whisk in flour and cook, whisking, until pale and bubbly for about 1 min
- Slowly whisk in milk, then the beer until smooth
- Whisk in Worcestershire sauce, dijon, garlic powder, paproka and salt until combined
- Reduce to medium-low and gradually whisk in cheeses a little at a time until melted and smooth
- Remove from heat and serve immediately
