Beer and Cheese Dip

  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2/3 cups whole warm milk
  • 1/2 cup beer
  • 1 tbsp Worcestershire sauce
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1 cup sharp cheddar cheese
  • 1 cup shredded gruyere
  • chopped chives for serving

  1. In a medium saucepan, on medium heat, melt butter
  2. Whisk in flour and cook, whisking, until pale and bubbly for about 1 min
  3. Slowly whisk in milk, then the beer until smooth
  4. Whisk in Worcestershire sauce, dijon, garlic powder, paproka and salt until combined
  5. Reduce to medium-low and gradually whisk in cheeses a little at a time until melted and smooth
  6. Remove from heat and serve immediately
