(place in small jar in order below)
- 1 egg
- 1 tsp mustard of choice
- 1/2 tsp salt (can omit)
- 2 tsp fresh lemon juice
- 1 tsp white vinegar
- 3/4 cup neutral oil (grapeseed is a very good choice)
Allow everything to sit for a minute.
Using the immersion blender, place the blender head at the very bottom and turn on; leave it there until it begins to thicken and emulsify, then slowly pull it up. Must be refrigerated.
