Diabetic Safe Flatbread Pizza

  •  1 low-carb, high-fiber flatbread or tortilla (such as Flatout or Ole Xtreme Wellness)
  • 1/4 cup cooked, shredded chicken breast
  • 2 tablespoons sugar-free BBQ sauce
  • 1/4 cup reduced-fat shredded mozzarella cheese
  • 1/4 small red onion, thinly sliced
  • 1/4 cup diced bell peppers
  • Fresh cilantro or parsley for garnish

  1. Preheat your oven to 375°F (190°C).
  2. Place the flatbread on a baking sheet lined with parchment paper or a nonstick baking mat.
  3. Spread the sugar-free BBQ sauce evenly over the flatbread.
  4. Sprinkle the shredded chicken breast evenly over the sauce.
  5. Top with the red onion slices and diced bell peppers (if using).
  6. Sprinkle the reduced-fat shredded mozzarella cheese evenly over the top.
  7. Place the flatbread in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the flatbread are crispy.
  8. Remove the pizza from the oven and garnish with fresh cilantro or parsley, if desired.
  9. Slice and enjoy your BBQ Chicken Flatbread Pizza!
