Whole Meal Sweet Potato

  •  4 medium sweet potatoes (about 2 lbs )
  • 1/2 lb sausage, cooked and crumbled
  •  2 medium apples, peeled, cored, and diced
  •  1 tbsp unsalted butter
  •  1 tbsp maple syrup or honey
  •  ½ tsp ground cinnamon
  •  ¼ tsp ground nutmeg
  •  ¼ cup chopped pecans or walnuts
  •  2 tbsp dried cranberries
  •  Salt, to taste

  1. Wash and dry the sweet potatoes.
  2. Make a slit in the center of each.
  3. Oil and wrap in foil.
  4. Bake at 400 for 55 minutes or until soft.
  5. In the meantime, saute the apples in butter, maple syrup, and a pinch of cinnamon and nutmeg, until softened but not mushy.
  6. Once the potatoes are cooked, open the foil wrapping and allow to cool slightly.
  7. Open up and fill with apples, pecans, and cranberries, then top with the sausage.
  8. Serve while warm.
