- 4 medium sweet potatoes (about 2 lbs )
- 1/2 lb sausage, cooked and crumbled
- 2 medium apples, peeled, cored, and diced
- 1 tbsp unsalted butter
- 1 tbsp maple syrup or honey
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ cup chopped pecans or walnuts
- 2 tbsp dried cranberries
- Salt, to taste
- Wash and dry the sweet potatoes.
- Make a slit in the center of each.
- Oil and wrap in foil.
- Bake at 400 for 55 minutes or until soft.
- In the meantime, saute the apples in butter, maple syrup, and a pinch of cinnamon and nutmeg, until softened but not mushy.
- Once the potatoes are cooked, open the foil wrapping and allow to cool slightly.
- Open up and fill with apples, pecans, and cranberries, then top with the sausage.
- Serve while warm.
