Mediterranean Ground Beef Stir Fry

  •  1 lb ground beef (90% lean or leaner)
  • 1 tbsp olive oil 
  • 1 small red onion, diced (in fridge)
  • 2 cloves garlic, minced (use the ones in EVOO and smash)
  • 1 small zucchini, diced 
  •  1 red bell pepper, diced
  •  1/2 cup cherry tomatoes, halved 
  •  1/3 cup Kalamata olives, sliced
  • 1 tsp dried oregano
  •  1/2 tsp smoked paprika
  •  1/2 tsp ground cumin
  •  Salt & black pepper to taste 
  •  1/4 cup crumbled feta cheese 
  •  1 tbsp lemon juice 
  •  2 tbsp fresh parsley, chopped 

  1.     Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. ️   Add ground beef & cook 5-6 mins, breaking it apart. Drain excess fat if needed.   
  3.    Add red onion & garlic, cook for 2 mins until fragrant.
  4. ️   Stir in zucchini, bell pepper, cherry tomatoes, olives, oregano, paprika, cumin, & red pepper flakes (optional).
  5.  Cook 5-6 mins.
  6. ️  Turn off the heat & stir in lemon juice & feta cheese.
  7. ️   Garnish with fresh parsley & serve warm!
