Creamy Italian Chicken

 This couldn't be easier OR healthier! The original recipe called for the heavy stuff but we've healthified it! 

  • 3 boneless, skinless chicken breasts (3 oz each
  • 8 oz block lower-fat cream cheese (Neufchatel) 
  • Can of condensed unsalted cream of chicken soup
  • A packet of dry Italian dressing mix (or use the Memaws version) 

  1. Cook on low for 6 hours (check to ensure the chicken is cooked).
  2. Remove the chicken, shred it, and return it to the mixture.
  3. Serve over toast, spaghetti, rice, or even stuffed in corn tortillas!
