Beef and Mushroom Stroganoff

 Stroganoff. Everyone had a favorite recipe. Hollywood stars had them. Stroganoff was served in lunch lines, at home, and even in schools. And it seemed everyone loved it! But this recipe is the one that made life in the 1970s easier. Its reliance on instant gravy made things much easier for the homemaker. Is it my personal favorite? Nope. Is it an easy family meal? Yes. Is it tasty- well, that depends on your taste buds!

  •  2 tbsp oil
  • 1 1/2 lb lean beef sirloin cut into thin strips
  • 1 package of sliced white mushrooms
  • 1 package lower-sodium dry gravy mix & 1 cup of water
  • 1 cup of the lowest-sodium sour cream you can find
  • 2 tbsp sherry

  1. In a pan, heat the oil and cook the meat in batches on medium heat until browned and slightly caramelized.
  2. Add in the sliced mushrooms and cook until they change color.
  3. Mix the sherry, gravy mix, and water, then add to the meat and mushrooms.
  4. Heat on low until warmed and thickened.
  5. Add the sour cream just before serving
