No-Bake Peanut Butter Bars

 Everyone loves peanut butter (except for those allergic to peanuts). But peanut butter bars are well above the ho-hum and a welcome weekday treat.

  • 1 cup salted butter, melted
  • 2 cups crushed graham crackers
  • 1/4 cup brown sugar
  • 1 3/4 cups powdered sugar
  • 1 cup + 4 tbsp peanut butter (chunky or other)
  • 1/2 tsp vanilla
  • 1 11oz bag of milk chocolate chips

  1. In a large bowl, combine everything EXCEPT the chips and 4 tbsp of peanut butter.
  2. Beat until smooth and creamy.
  3. Line a 9x13-inch pan with wax paper and spread the mixture.
  4. Melt the chips in a bowl, stirring as needed, at 50% power for 1-2 minutes, in 30-second intervals.
  5. Once melted, stir in the 4 tbsp of peanut butter and pour over the first layer, and spread around.
  6. Tap the pan in the center to even out, then chill in the fridge for at least 1 hour.
