Classic Lemon Bars

I love a good lemon bar! I know. I know. You can go ahead and buy the kit if you like. But kits aren't quite the same and definitely aren't a challenge. This is a from-scratch recipe that's easy to make and really lemony good.

Bake at 350 in a9x13-inch pan 👈 VERY IMPORTANT!

Crust

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 2/3 cup confectioners sugar
  • 12 tbsp unsalted, melted and cooled butter

  1. Whisk together the flour, salt, and confectioner's sugar.
  2. Add the melted butter and press it into the pan. 
  3. Bake for around 20 minutes but do not let it turn dark.
  4.  Remove and cool.

Filling

Combine the zest of 3 lemons and 3 cups of sugar in a processor and whizz until the sugar is pale yellow. Set aside.

  • 1 cup fresh lemon juice
  • 1/2 cup flour
  • 8 large room-temperature eggs

  1. Place sugar in a large bowl with the flour and whisk to combine.
  2. Combine the lemon juice with the eggs and whisk until combined.
  3. Add the egg and lemon mixture to the sugar and flour mixture.
  4. Place in a 350-degree oven for 25 minutes, until it's slightly jiggly but not loose.
  5. Let it set until cool, then chill in the fridge overnight for best results. 
  6. Cut and serve.
