I love a good lemon bar! I know. I know. You can go ahead and buy the kit if you like. But kits aren't quite the same and definitely aren't a challenge. This is a from-scratch recipe that's easy to make and really lemony good.
Bake at 350 in a9x13-inch pan 👈 VERY IMPORTANT!
Crust
- 2 1/2 cups flour
- 1/2 tsp salt
- 2/3 cup confectioners sugar
- 12 tbsp unsalted, melted and cooled butter
- Whisk together the flour, salt, and confectioner's sugar.
- Add the melted butter and press it into the pan.
- Bake for around 20 minutes but do not let it turn dark.
- Remove and cool.
Filling
Combine the zest of 3 lemons and 3 cups of sugar in a processor and whizz until the sugar is pale yellow. Set aside.
- 1 cup fresh lemon juice
- 1/2 cup flour
- 8 large room-temperature eggs
- Place sugar in a large bowl with the flour and whisk to combine.
- Combine the lemon juice with the eggs and whisk until combined.
- Add the egg and lemon mixture to the sugar and flour mixture.
- Place in a 350-degree oven for 25 minutes, until it's slightly jiggly but not loose.
- Let it set until cool, then chill in the fridge overnight for best results.
- Cut and serve.
