Gougeres

  This is a fancy name for Cheese puffs. What I like about them is that they're easy to make and they can make a good, quick snack. You're making a choux, and that's easy to do!

  • 1 cup water
  • 8 tbsp butter (cold and cut up)
  • 1 cup flour
  • 4 eggs (room temp)
  • 1/4 cup cheese, grated (cheddar is most popular)
  • dash salt if desired

  1. Heat the water to a boil on the stove, then add the butter to melt.
  2. Plop the flour in all at once, then stir over the heat to cook it.
  3. Transfer to the stand mixer and beat until cool to room temperature.
  4. Add in one egg at a time, incorporating thoroughly.
  5. Add in the cheese and stir in.
  6. You can pipe these or spoon them onto a baking sheet lined with parchment but make them uniform in size.
  7. Bake at 400 degrees until they rise and turn deep golden brown.
