This is a fancy name for Cheese puffs. What I like about them is that they're easy to make and they can make a good, quick snack. You're making a choux, and that's easy to do!
- 1 cup water
- 8 tbsp butter (cold and cut up)
- 1 cup flour
- 4 eggs (room temp)
- 1/4 cup cheese, grated (cheddar is most popular)
- dash salt if desired
- Heat the water to a boil on the stove, then add the butter to melt.
- Plop the flour in all at once, then stir over the heat to cook it.
- Transfer to the stand mixer and beat until cool to room temperature.
- Add in one egg at a time, incorporating thoroughly.
- Add in the cheese and stir in.
- You can pipe these or spoon them onto a baking sheet lined with parchment but make them uniform in size.
- Bake at 400 degrees until they rise and turn deep golden brown.
