Carrot Cake Cookies

  •  1 cup shredded carrots
  • 1 tsp baking soda
  • 270 grams all purpose flour
  • 3/4 tsp sea salt
  • 2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg, cardamom, and all spice
  • 226 grams softened butter
  • 100 grams granulated sugar
  • 220 grams packed brown sugar
  • 80 grams chopped pecans or walnuts
  • 1 egg
  • 2 tsp vanilla
  • 80 grams rolled oats

  1. Whisk together the baking soda, flour, sea salt, and spices
  2. Mix the butter and sugars until light and fluffy, around 2-3 minutes.
  3. Add in one egg and vanilla, and beat
  4. Slowly add in the dry ingredients (the mixture will be dry)
  5. Add in the carrots and then the oats and combine. 
  6. Lastly, add in the pecans

There is NO chill time on these! 

For the Frosting:

  • 8 oz softened cream cheese
  • 1/2 cup warm butter
  • Confectioner's sugar
Cream well and top on the cookies once cooled.
