Servings: 6–8 squares
- 3 cups cooked, shredded chicken breast
- 1 cup low-fat cottage cheese (blended smooth)
- 4 large eggs
- 1 ½ cups shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup finely chopped green onions
- ½ cup diced bell peppers (optional)
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp Italian seasoning
- Salt & black pepper to taste
- Red pepper flakes (optional)
- Preheat to 375°F (190°C). Lightly grease a baking dish (8x8 or similar).
- In a large bowl, whisk eggs and blended cottage cheese until smooth.
- Fold in shredded chicken, green onions, peppers, seasonings, and half of the mozzarella.
- Spread mixture evenly into the baking dish.
- Top with remaining mozzarella and cheddar.
- Bake 25–30 minutes until golden, bubbly, and set in the center.
- Let rest 5–10 minutes before slicing into squares.
