Balsamic Bruschetta

8 servings

  • 1 loaf of french bread cut into 1/4" slices
  • 1 tbsp EVOO
  • 8 plumb tomatoes, diced
  • 1/3 c fresh chopped basil
  • 1 oz freshly grated parmesan
  • 2 cloves minced garlic
  • 1 tbsp good quality balsamic vinegar
  • 2 tsp EVOO
  • 1/4  tsp each salt and black pepper

  1. Preheat oven to 400 
  2. Brush the slices with 1 tbsp of oil and place in the oven until golden, flipping 1/2 way through
  3. Toss the other items together and chill
  4. Spoon over the toasted bread slices.
