Bacon Pea Salad

serves 8
  • 2 slices of bacon, cooked and crumbled, or 4 tbsp bacon bits, crisped
  • 3/4 cup light mayonnaise
  • 1 tbsp honey
  • 1 tbsp sugar  (or substitute)
  • salt and pepper to taste
  • 1 small can of baby peas, drained
  • 1 celery rib, chopped
  • 1/4 cup cubed cheddar cheese
  • 2 tbsp finely chopped red onion
  1. Cook the bacon until crispy, then drain it.
  2. Whisk mayo, honey, sugar, salt, and black pepper until smooth
  3. Mix bacon, peas, celery, cheese, and onion, and top and mix with the dressing
  4. Chill
