- 1 tbsp EVOO
- 1/2 cup chopped onion
- 3/4 cup diced mushrooms
- 1 cup diced tomato
- 1 c baby spinach
- 1 cup couscous
- 3/4 cup chicken broth
- Sauté the onion and mushrooms until the water is gone
- Add the spinach and tomato to the pot and stir
- Add 1 cup of couscous
- Add in the chicken broth and bring to a boil, then shut off the heat and cover
- Wait at least 10 minutes before checking
- fluff to serve
NOTE: you can replace the couscous with any grain and come out with the same effect. I use whole wheat couscous.
